Lemon Orzo
This recipe is my go-to for a quick, but delicious side. We love it with salmon, chicken, pork chops, honestly, just about anything. It has the perfect amount of lemon and a touch of creaminess. I always used to buy the boxed rice/orzo/Uncle Ben’s type sides. Until I realized how easy it is to make my own sides, and not only are they healthier, they are delicious! Try it out!
Lemon Orzo
Prep: 3 minutes| Cook: 10 minutes | Serves: 6
Ingredients:
- 2 tbsp olive oil
- 2 tsp garlic
- 2 2/3 cups orzo
- lemon zest (from one lemon)
- 5 cups chicken broth
- 1/2 tsp black pepper and salt
- 1/2 cup parmesan cheese
- Juice from one lemon
- 1/3 cup heavy cream
- 1 tbsp parsley
Instructions
Heat olive oil in pan, add garlic and sautee for a few minutes. Add orzo and stir to toast. Add lemon zest to orzo and let cook for a few minutes, being careful not to burn the orzo. Add chicken broth and let it come to a boil. Add salt, pepper, and let cook for 10 minutes or until all the liquid has been absorbed.
Add parmesan, lemon juice, and heavy cream. Top with parsley and enjoy!
