Pizza Soup

My kids LOVE this soup…which I think is a little crazy because it is packed with veggies. Tomatoes, olives, peppers, onions, and mushrooms…but they don’t complain about a single one of them and devour this soup.

If I remember, I like to throw this in the crock pot for the day because the longer it cooked…the better those flavors meld together. Make sure to dip some garlic bread in that delicious broth!

Pizza Soup

Prep time: 15 minutes. Cook time: 35 minutes

Ingredients

  • 2 Tbsp Olive oil

  • 1 lb italian pork sausage

  • 1 large white onion

  • 8 cloves garlic

  • 1/2 cup sliced pepperoni

  • 1 red bell pepper

  • 1 green bell pepper

  • 8 oz sliced mushrooms

  • 1/2 tsp oregano

  • 1 tsp salt

  • 1/2 tsp black pepper

  • 14 oz can fire roasted tomatoes

  • 14 oz italian style diced tomatoes

  • 4 c chicken stock

  • 1 Large jar sliced black olives

  • Grated Parmesan for topping

  • Mozzrella cheese for topping

  • Garlic bread for dipping

Instructions

Brown your sausage with olive oil in a large dutch oven or large pot. Add onion and cook until transluscent. Add garlic, red and green bell pepper, salt, pepper, and oregano. Let cook for 5 minutes stirring occasionally.

Add all other ingredients (pepperoni, mushrooms, tomatoes, chicken stock, and olives)

Let cook for 30 minutes for flavors to meld or all day in a crockpot on low.

Serve with shredded mozzarella and grated parm on top. Serve with crusty garlic bread for dipping into the broth. Enjoy!
