Chicken Alfredo Muffins
We’ve all been there: you want the comfort of a big bowl of pasta, but you need something that fits in your hand on the go, packs a protein punch, and doesn't take an hour to prep. Enter the Chicken Alfredo Muffin.
Think of these as the sophisticated, savory cousin of the cupcake. We’re talking buttery buttermilk biscuits stuffed to the brim with a rich, garlicky homemade Alfredo sauce (or not), tender chicken, and just enough broccoli to make you feel good about your life choices.
They’re kid approved- you can sub another veg that your child approves of or even leave it out and on the side for more chance that they’ll eat something for dinner?
The homemade alfredo sauce I make is super simple and so ridiculously yummy. I hope I can convince you to make that part homemade…because once you make it you won’t go back to store-bought….but if time is not on your side…get your favorite store alfredo sauce and don’t stress about it!
I like to serve this with some fruit on the side, but the muffins are a complete meal all on their own.
Chicken Alfredo Muffins
Servings: 8 (2 muffins each)
Prep time: 15 minutes | Cook time: 20-30 minutes
Ingredients:
- 2-3 cups cooked chicken, diced
- 2 cans of 8 buttermilk biscuits
- 2-3 cups chopped steamed broccoli
- 1 Jar alfredo - or homemade version below
Alfredo- homemade:
- 1/4 cup unsalted butter
- 1 cup heavy whipping cream
- 2 oz cream cheese
- 1/4 tsp minced garlic
- 1/2 tsp garlic powder
- 1/2 tsp italian seasoning
- pinch salt and pepper
- 1/2 cup grated parmesan cheese
Butter mixture- for before and after baking
- 4 tbsp butter, melted
- 1 tsp garlic powder
- 1 tsp parsley
Instructions
Make the homemade alfredo:
Add butter, heavy whipping cream, and cream cheese to a saucepan pan heating on medium heat until melted- whisking occasionally. Whisk in seasonings and then parmesan cheese. Bring to a simmer and let cool.
In a bowl, add the chopped chicken, Alfredo sauce, and chopped broccoli, then stir.
When you are ready- use your butter mixture to brush on the insides of the muffin tins or spray the muffin cups and press a biscuit into each spot - making a hole for the filling and pushing the biscuit up to the side.
Add the filling to each biscuit filling it as much as possible. Brush the rest of the melted butter along the outsides of the biscuit. Bake at 400° F for 20-30 minutes or until golden brown on the outside.
