Ingredients:
- 1 pound Italian sausage, casings removed
- 1 onion, diced
- 4 cloves garlic, chopped
- 1/2 teaspoon ground fennel (optional)
- 8 cups chicken broth
- 2 (14.5 ounce) can petite diced tomatoes
- 1 lb ditalini pasta
- 2 teaspoon Italian seasoning
- 1 cup spinach, chopped
- 1 cup parmigiano reggiano (parmesan), grated
- 8 ounces cream cheese (softened)
- 1 cup heavy cream
- 1 tbsp sliced basil (if you have it, if not, omit)
- salt, pepper, and parsley to taste
Instructions
- Cook the sausage and onion in a large saucepan until cooked, breaking the sausage apart as it cooks, before draining any excess grease.
- Add the garlic, fennel, and Italian seasoning- mix, and cook until fragrant, about a minute.
- Add the broth and tomatoes, bring to a boil, and then add pasta and cook according to the package.
- Add the chopped spinach and let cook for a few minutes. Add in the parmesan, cream cheese, and cream, and let the cheeses melt into the soup, for about 3-5 minutes.
- Add in the sliced basil, and season with salt and pepper to taste, mix in the parsley and enjoy!
