Banana Oatmeal Skillet Cookie

Ingredients:
- 1 1/2 cups flour
- 1 1/2 cups oats
- 1 tsp cinnamon
- 1/2 tsp baking soda
- 1/2 tsp baking powder
- 1/2 tsp salt
- 1 cup salted browned butter
- 3/4 cup brown sugar
- 1/2 cup sugar
- 1/2 cup mashed banana
- 1 egg, room temperature
- 2 tsp vanilla
- 1 1/2 cups semi sweet chocolate chips
- vanilla ice cream
Caramelized bananas
- 2 tbsp salted butter
- 1 banana, sliced
- 2 tbsp brown sugar
- 1 tsp cinnamon
Instructions
Preheat oven to 350°F. Heat a 10” cast iron pan to medium heat and add your butter to the pan. Brown the butter slowly (5-8 minutes) until browned and smelling nutty.
In a bowl, whisk the flour, oats, cinnamon, baking soda, baking powder, and salt together.
Once browned, add the mashed bananas and mix. Turn off heat and let it cool for about 10 minutes.
Add both sugars to the cast iron skillet and whisk to combine. Whisk in egg and vanilla and then add in the dry ingredients. Fold in the chocolate chips and press evenly all around the skillet.
Place in the oven for 28-32 minutes- it will be golden and slightly gooey in the middle. While it is baking, make your caramalized bananas. Melt the butter in a separate skillet, add the banana slices and sprinkle 1 tbsp of the brown sugar 1/2 of the cinnamon over top. Flip and cook for 4 minutes. After flipping, add the last of the brown sugar and cinnamon. After you cook on one side flip, and cook the other side for 3 minutes. When they are done, let them cool slightly while waiting for the cookie to be done. Cool for 10 minutes before serving.
Serve the cookie warm with vanilla ice cream and carmalized bananas on top.
