Pierogi Lasagna
If we are craving pierogi, but don’t have time to make the individual pierogi’s…I make this. It is such a close copycat of the original pierogi’s that my whole family devours this. It is especially great if you make the mashed potatoes or caramelized onions ahead of time. Don’t skip on the caramelized onions…my family doesn’t like onions either, but they don’t complain them in this recipe. If you have really picky eaters, dice the onions and hide them all in the mashed potatoes.

Pierogi Lasagna
Serving size: 8-10
Prep time: 45 minutes | Cook time: 30 minutes
Ingredients:
- 12 lasagna noodles
- 1 stick butter, plus a couple tbsp on top
- 1/2 tsp salt
- 2 onions, sliced
- 1 tsp white pepper
- 8 oz cheddar cheese, shredded
- 6 cups mashed potatoes (5 lb bag)- I add milk and salt to mash
Instructions:
Preheat oven to 375°F.
In a large skillet, over medium heat, melt butter (keep the butter wrapper) and add sliced onions and a couple pinches of salt. Cook until caramelized (30-45 minutes). While cooking the onions, cook the potatoes and mash them if you haven’t already. Cook Lasagna noodles according to package, drain and get ready to assemble.
Set aside 1/2 cup of the onions and add the rest to the mashed potatoes along with the white pepper and cheese- mix well.
Coat a 9x13in baking dish with butter from the butter wrapper (or use spray). Place 3 lasagna noodles to the bottom of the pan, spread 1/3 of mashed potatoes over the noodles, then top with noodles and keep layering 2 more times (layer of noodles on top). Top with reserved onions and a couple of tbsp of butter.
Cover with aluminum foil and bake for 30 minutes. While it bakes, boil your kielbasa and get some sauteed cabbage going and enjoy!
