S’mores Bars

S’mores are such a classic and, in my opinion, shouldn’t be messed with very often. The classic flavors are just paired so well. BUT…these are amazing and totally hit the classic flavors, but are enhanced with the yummy yellow cake and marshmallow fluff. They are perfect for any backyard bbq or get together!

S'mores Bars

Prep time: 10 minutes | Bake time: 20 minutes

Servings: 15-24 bars

Ingredients:

  • 18 oz box yellow cake mix, (or similar size) just the mix
  • 1 egg
  • 1/2 cup butter, melted
  • 2 cups graham cracker crumbs
  • 7 oz marshmallow creme
  • 2 cups milk chocolate chips
  • 1 cup mini marshmallows

Instructions:

Spray your 9x13in pan with cooking spray and set aside. Preheat your oven to 350°F.

In a large bowl, combine cake mix, egg, butter, and graham cracker crumbs. Mix all together using a fork until the mixture can be squeezed together and hold it's shape. Reserve 1 1/2 cups to the side and use the rest of the mixture to press down into the bottom of your 9x13in pan. Sprinkle 1 1/2 cups chocolate chips onto the crust and press down slightly.

Spray a spatula or spoon with avocado spray (this will help the marshmallow fluff not stick) and then scoop the marsh mallow fluff onto the chocolate chips in dollops. Once you get it all scooped (you may have to reapply the avocado oil spray) then spready it out into a thin layer. Sprinkle the top with mini marshmallows and the remaining chocolate chips. Then top it all by crumbling up the graham mixture over it all.

Bake for 20 -22 minutes and turn the broiler on for the last 1 minute to lightly brown the marshmallows. Be sure to watch closely so not to burn them!

Let cool completely and cut into squares.
