Strawberry Rhubarb Crumble
Whether rhubarb is exploding in your garden or you have a neighbor trying to give you some…this is one recipe you can run to year after year. It has the perfect sweetness and tanginess that makes my mouth water and get super excited about rhubarb season! Plus….warm anything crumble with vanilla ice cream just screams YUM!!!
Strawberry Rhubarb Crumble
Prep time: 10 minutes | Cook time: 40-50 minutes
Ingredients
- 2 cups rhubarb diced
- 2 cups strawberries
- 1/2 cup sugar
- 1 &1/2 Tbsp corn starch
- 1/8 tsp salt
Crumble:
- 3/4 cup flour
- 1/2 cup brown sugar
- 2 Tbsp sugar
- 1 tsp cinnamon
- 1/8 tsp salt
- 6 Tbsp cold butter
Instructions
Combine rhubarb, strawberries, sugar, corn starch, and salt and mix well. Add that to greased 2 qt container or square pan. Combine flour, brown sugar, sugar, cinnamon, and salt together. Cut butter into mixture until resembles crumbs. Add this to the top of the rhubarb/strawberry mixture and bake at 375 degrees for 40-50 minutes. Let cool for 15 minutes and then make sure to serve with ice cream.
