Baked Apple Fritter Bites
We crave Apple Fritters, but I wanted to find a slightly healthier way that I didn’t have to fry. These met our high expectations! They have the same crispy outside and soft inside with the delicious glaze melted over top….easier, healthier, and still so delicious! Try them out!
Baked Apple Fritter Bites
Ingredients:
Overnight sponge:
- 100g sourdough starter
- 300g all purpose flour
- 60 g sugar
- 180g warmed whole milk
- 1/4 cup melted butter
After ferment:
- 1 egg
- 1 small apple, diced
- 1 tsp baking soda
- 1/2 tsp Cinnamon
- 1/2 tsp nutmeg
- 1/4 tsp cloves
- 1/2 tsp salt
- 1 Tbsp apple butter
Glaze
- 2 cups powdered sugar
- 1 tsp vanilla
- 1 Tbsp apple butter
- 1-2 Tbsp milk
Instructions
To make the overnight sponge, just mix all of the sponge ingredients in a large bowl. Cover and let ferment overnight (8-12 hours).
In the morning, add egg, diced apple, cinnamon, nutmeg, clove, salt, baking soda, and apple butter to your overnight sponge. Mix everything by hand until well combined.
Scoop into mini muffin pans (favorite https://amzn.to/4rQk9tz) - bake 350* for 15-18 minutes (or until toothpick comes out clean). If you are using a metal mini muffin pan, throw the broiler on for a few minutes until you get a slight crunch on the top of the muffins— if you are using a silicon muffin pan— follow these directions- let cool, and then when you can easily pop them out throw them on a parchment lined cookie sheet and broil for 3 minutes (turning if getting too brown) or until just crispy on top.
Then make the glaze- combine all glaze ingredients and stir - add more milk if you want it thinner, but I keep mine thick because it melts on the hot fritter.
Top the still warm fritters with your glaze and they are ready to eat!
