Sweet Potato Nachos
Is there a bad way to eat taco toppings? I think not…and we have some sort of taco/nacho/burrito/bowl type of thing every single week…so sometimes it’s fun to mix it up a little, and these were so good! They do take a little time to roast the sweet potatoes, but it is so worth it!
When I was little, I thought the only way to eat a sweet potato was to slather them in butter, brown sugar, and marshmallows for Thanksgiving. I will tell you…I did not like sweet potatoes…and I really think that doesn’t give sweet potatoes the amazingness they deserve. Try these out if your favorite dish is the Thanksgiving sweet potato version….I promise it will change your opinion about how sweet potatoes should be consumed.
Sweet Potato Nachos
Ingredients:
Sweet potatoes:
- 2 sweet potatoes (make sure to double seasoning for more)
- 2 tsp salt
- 1 tsp garlic powder
- 1 tsp paprika
- 1/4 tsp chilli powder
- 1/4 tsp cumin
- 1/4 tsp cayenne (or more for spicier)
- 1/4 cup coconut oil or avocado oil
Toppings:
- 1 LB ground turkey
- 4 tsp Lawry's
- 2 tsp paprika
- 1 tsp cumin
- 1/4 tsp cayenne (more or less depeding on your spice level)
- black beans
- rotel diced tomatoes
- red onion
- cilantro
- sour cream
- guacamole
- shredded cheddar cheese
- Salsa
Instructions
Peel and dice your potatoes. Line cookie sheet with parchment paper or throw potatoes in your cast iron. Mix spices. Add oil to potatoes and then your seasonings. Stir around. Bake at 400 degrees for 30-40 minutes or until fork tender.
Make your taco meat- brown the ground turkey, add black beans, rotel, and seasoning- mix well.
Assemble- start with sweet potatoes, add your taco meat, cheese, sour cream, guacamole, salsa, red onion and cilantro. (or your favorite nacho toppings)
