These BBQ Pulled Pork Nachos are the ultimate "low effort, high reward" dish. If there’s one rule for Super Bowl Sunday, it’s this: The nachos must be epic. These Pulled Pork Nachos are a total game-changer, swapping the usual taco meat for smoky BBQ pork and crunchy pickles. It’s the salty-sweet-spicy combo you didn't know your party was missing!

The roasted corn is a quick 2 minute step that takes the frozen or canned corn to a whole new level with the quick seasoning blend (Tajin, paprika, cumin).

I love using leftover pulled pork for this, but if you’re short on time, grab a pre-shredded tub from the grocery store. No one will know the difference once it's smothered in spicy queso and BBQ sauce!

BBQ Pulled Pork Nachos

Serving size: 8

Prep time: 5-10 minutes | Cook time: 3 minutes

Ingredients:

  • Half a bag of tortilla chips
  • 2 cups pulled pork, warmed
  • 8+ oz cheddar cheese
  • Old El Paso Spicy Queso Blanco
  • 1 cup corn (roast corn with garlic powder, tajin, paprika, and cumin)
  • Favorite BBQ Sauce
  • Pickles (Grillos are the best choice…just saying)
  • Other possible toppings- red onion, jalapeno, guacamole, sour cream, black beans, bacon bits

Instructions:

Don’t complicate it…layer chips, pulled pork, cheese, roasted corn, bbq sauce and pickles. Bake under a broiler until melty and then top with more bbq sauce and queso. Super easy, but super delicious.

Customize it to your party and add red onion, jalapeno, guacamole, sour cream, black beans, and even bacon bits. Enjoy!
