Caprese Pasta Salad
This is one of my favorite summer pasta salads. Starts with the amazing flavor combination of tomatoes, mozzarella cheese, and basil, but with the white balsamic vinegar (needs to be white) and the addition of mozzarella balls…it takes it to flavor town.
Caprese Pasta Salad
Cook time: 20 minutes | Chill Time: 2 hours
Ingredients
- 1 lb penne or short pasta - or tortellini
- 2/3 c. Olive oil
- 1/3 c white balsamic vinegar
- 2 garlic cloves, grated
- 1 tsp salt
- 1/4 tsp ground black pepper
- 4 c cherry tomatoes, halved
- 16 oz small mozzarella balls
- 1 c chopped fresh basil
Instructions
Cook pasta according to package. Drain and rinse and toss with 1 Tbsp olive oil and set aside to cool.
Meanwhile, whisk 2/3c olive oil, white balsamic vinegar, garlic cloves, salt and pepper together in large bowl. Add the cherry tomatoes and mozzarella balls and let marinate while pasta cools.
Add all together and stir in basil. Let it cool in the fridge for a couple of hours and serve.
