These are one of my favorite things to prep- my kids love them one time and hate them the next….but either way, I love prepping them for a busy week. I can eat them plain with hot sauce, or wrap two in a tortilla, smashed down a little bit, and it becomes a delicious and super-easy breakfast burrito. They are completely customizable to suit your preferences for eggs.

Egg Cups

Prep time: 15 minutes | Cook time: 25-30 minutes

Ingredients

  • 18 eggs
  • English muffins
  • 1.5 cups cottage cheese,
  • 1 red bell pepper
  • 2 green onions
  • 1 lb ground sausage
  • 8 oz shredded cheese.

Instructions

Brown your sausage and drain. Chop your veggies. Blend your eggs with your cottage cheese. Now assemble- place a 1/4 of one side of your English muffin in your muffin pan, top with sausage, veggies and then fill the cup with your egg mixture and top the whole thing with cheese. Bake at 375 for 25 minutes or until they puff up and are no longer jiggly. Enjoy as is or for an alternative to eating these, chop up and add to a tortilla with sour cream and salsa for a quick breakfast burrito. Enjoy!
