Jumbo Stuffed Shells
Prep time: 20 minutes | Cook time: 30 minutes
Ingredients
- 1 box jumbo shell pasta
- 1 lb Italian sausage
- 16 oz mozzarella (freshly shredded is always best)
- 15 oz ricotta
- 1 egg
- 1-2 tsp garlic powder
- 1 tsp salt
- 1 tsp oregano
- 1/2 tsp pepper
- 1 cup shredded parmesan
- 4 oz cream cheese (softened)
- 2 cups roughly chopped spinach
- 1 jar spaghetti sauce
Instructions
Preheat your oven to 350 degrees. Start by browning your sausage and shredding your mozzarella. Boil your shells about a minute less than the package says. You don’t want them falling apart, but pliable enough for filling.
Then mix your ricotta, 1 cup mozzarella, egg, all your spices, 1/2 cup of parmesan, and cream cheese. Mix that up well and then add spinach and cooked and drained sausage. When your pasta is done drain it and let it cool until you can handle the shells. Prepare your 9x13 with a little spaghetti sauce to coat the bottom.
Then take a larger spoon and flip up the inside of one side of the shell and spoon in the mixture into the shell- pushing in as much as you can. Place in your pan and then continue filling the shells adding them to the line in your 9x13. When done filling all the shells (you may have leftover shells), add the rest of your spaghetti sauce on top along with the rest of your mozzarella and parmesan. Cover with aluminum foil and bake for 30 minutes or until the cheese is bubbly. Then you are ready to enjoy!
