Pineapple Chicken

Sweet, a little spicy, and perfect for a weeknight meal! My kids devoured this, and then they fought over the leftovers the next day! I’d say that’s a win!

Pineapple Chicken

Prep time: 10 minutes | Cook time: 30 minutes

Ingredients

  • 2 tbsp avocado oil
  • 2 tsp sesame oil
  • 2 lb chicken breast, cut into bite size pieces
  • 20 oz canned pineapple tidbits and juice
  • 2 cloves minced garlic
  • 1 tsp minced ginger
  • 1/4 cup soy sauce
  • 2/3 cup chicken broth
  • 1/3 cup hoisin sauce
  • 1/4 cup brown sugar
  • 1 tbsp sriracha
  • 2 tsp corn starch
  • 2 tsp cold water
  • 2 Tbsp sesame seeds
  • Salt and pepper to taste

Instructions

  1. Cut chicken into bite size pieces and dry with paper towels. Season with salt and pepper.
  2. Heat oil in pan and add chicken, cook 8 minutes until browned on all sides. Move chicken to plate
  3. Add garlic and ginger to pan and let cook for 30 seconds. Add chicken broth to the pan and scrap up brown bits.
  4. Combine pineapple juice (drained from the pineapple tidbits, soy sauce, hoisin sauce, sriracha and brown sugar. Mix together well.
  5. Add sauce, pineapple tidbits and chicken back to the pan and bring to a boil
  6. In separate bowl, combine corn starch and cold water - mix until combined and then add to pan and stir until thickened (about 8 minutes)
  7. Garnish with sesame seeds and serve over rice with steamed broccoli on the side.
