Pineapple Chicken
Sweet, a little spicy, and perfect for a weeknight meal! My kids devoured this, and then they fought over the leftovers the next day! I’d say that’s a win!
Pineapple Chicken
Prep time: 10 minutes | Cook time: 30 minutes
Ingredients
- 2 tbsp avocado oil
- 2 tsp sesame oil
- 2 lb chicken breast, cut into bite size pieces
- 20 oz canned pineapple tidbits and juice
- 2 cloves minced garlic
- 1 tsp minced ginger
- 1/4 cup soy sauce
- 2/3 cup chicken broth
- 1/3 cup hoisin sauce
- 1/4 cup brown sugar
- 1 tbsp sriracha
- 2 tsp corn starch
- 2 tsp cold water
- 2 Tbsp sesame seeds
- Salt and pepper to taste
Instructions
- Cut chicken into bite size pieces and dry with paper towels. Season with salt and pepper.
- Heat oil in pan and add chicken, cook 8 minutes until browned on all sides. Move chicken to plate
- Add garlic and ginger to pan and let cook for 30 seconds. Add chicken broth to the pan and scrap up brown bits.
- Combine pineapple juice (drained from the pineapple tidbits, soy sauce, hoisin sauce, sriracha and brown sugar. Mix together well.
- Add sauce, pineapple tidbits and chicken back to the pan and bring to a boil
- In separate bowl, combine corn starch and cold water - mix until combined and then add to pan and stir until thickened (about 8 minutes)
- Garnish with sesame seeds and serve over rice with steamed broccoli on the side.
