Pastina

This is the most comforting meal when you need something cozy…sick or not. It is a super popular recipe online, so I am not sure where I originally got it, but it has become a staple in our house during the winter time when you need something nourishing and warm.

Pastina

Prep time: 15 minutes | Cook time: 30-35 minutes

Serving size: 4-6

Ingredients

  • 1 whole onion
  • 5 cloves garlic
  • 2-3 large carrots
  • 2-3 celery stalks
  • Parmesan rind
  • 1 tsp turmeric
  • 6 cups chicken broth
  • 1 tsp salt
  • 1 bay leaf
  • 1/2 juiced lemon
  • 2 cups tiny pasta (Pastina if you can find it)
  • 4 Tbsp butter
  • 2 eggs
  • 1 cup grated Parmesan
  • Black pepper

Instructions

Place onion, garlic, carrot, celery, Parmesan rind, turmeric, salt, pepper, chicken broth and bay leaf in large pot and boil for 30 minutes.

Take out Parmesan rind and bay leaf. Scoop the rest of the pot into a blender and blender until smooth. Add back to the pot along with lemon juice.

Boil your tiny pasta/pastina according to package directions. Drain water, add butter and stir until melted. Scramble the eggs in a separate bowl, add Parmesan and then add to the hot pasta. Mix until eggs are cooked and the mixture is creamy.

Serve by adding pasta to bowl, topped with broth and additional pepper and Parmesan.
